You like peaches? You like liquor? How about making some peach Liquor? If you have a lot of peaches, it is not difficult to make some liquor with them. You just have to have some time for the process and of course few other things.

Depending on where you are, or what you have available, the way of making peach liquor is a little different. But lets assume that you can buy some vodka and brandy to make peach liquor.

Peaches

This is what you need:

  • 1 cup of water
  • 2 lbs. fresh ripe peaches, stemmed and washed
  • 1 tsp. lemon zest
  • 1 tsp. orange zest
  • 1 1/2 cups 100 proof vodka
  • 1-cup brandy
  • 4 drops yellow food coloring
  • 1 2-litter (2 quarts) glass jar with an airtight top. It should be sterile, perfectly clean!

Make simple syrup by mixing the sugar and water, boiling it until the syrup water it totally clear. Do it at a medium high heat and stir constantly to avoid scorching. Remove from the heat and let it cool down until just warm. Remove the pits from the peaches, cut the peaches in thin slices. Put the peaches, the pits and citrus zests in the clean jar. Pour the syrup over the peaches. Add the vodka, brandy and food coloring, and close the jar airtight. Leave it in a cool dark place for 2 weeks.

Transfer the liquor to a clean container and let it sit for another 2 to 3 weeks. Filter it into a final container that can be a wine bottle, a fruit jar or a decanter. Taste it!
